Tapioca is a carbohydrate obtained from the cassava root (Manihot esculenta), a tropical plant native to South America, Africa and Asia. To produce the hard pellets, the tapioca root is cut into slices and sun-dried. After drying, it is ground into flour. The flour is then pressed through dies to produce a grey-white pellet.
